African Chicken Peanut Stew (Print Version)

# Ingredients:

01 - 1.5 lb chicken thighs
02 - ½ cup tomato sauce
03 - 1 red bell pepper, chopped
04 - ½ cup peanut butter
05 - ¼ cup olive oil
06 - ½ onion, chopped
07 - 1 teaspoon cayenne pepper
08 - 1 teaspoon bouillon powder
09 - 2 cups chicken stock
10 - 1 teaspoon black pepper
11 - 1 teaspoon salt, or to taste

# Instructions:

01 - Wash and pat dry the chicken. Mix some salt and pepper in a small bowl, then rub it on both sides of each chicken part.
02 - Pour some olive oil into a large skillet and then brown the chicken pieces on both sides on medium-high heat. When sufficiently browned, remove the chicken thighs from the oil and set them aside.
03 - Pour ¼ cup olive oil into a large soup pot. When heated, add the chopped onions and red bell pepper. Sauté for a few minutes on medium heat.
04 - Add the tomato sauce and spices (except the salt) to the pot, simmer for a few minutes, and then pour in the chicken broth.
05 - Add the chicken pieces to the pot, give it a stir, and simmer for about 10 minutes. Taste for salt and adjust if needed.
06 - Add the peanut butter into the pot and stir until it is well mixed. Cook until the stew thickens.
07 - Your African chicken peanut stew is ready to be enjoyed!

# Notes:

01 - If you're using stock, taste for salt beforehand as stock often contains salt.
02 - Add chili pepper or habanero pepper for a spicier stew.
03 - You can swap the chicken for beef or fish for variety.
04 - For more flavor, consider adding ground coriander, chopped cilantro, garlic, fresh ginger, or ground cumin.
05 - If substituting water for stock, adjust the spices as needed.
