In a small bowl, whisk together the honey, cinnamon, and vanilla until well combined. Set the sauce aside. If you prefer extra sauce for serving, consider doubling these ingredients.

Preheat your oven to 350°F (175°C). Lightly coat a baking dish with non-stick cooking spray. Choose a dish large enough to hold all the nectarine halves in a single layer with a little space between them.

Place the nectarine halves in the prepared baking dish with the cut side facing up. Pour the cinnamon honey sauce over each nectarine half, filling the center cavity and allowing it to drip down the sides. If desired, reserve a small amount of sauce for additional drizzling when serving.

Bake in the preheated oven for 25-30 minutes, or until the nectarines have softened and the sauce is bubbling around them. The exact time will depend on the ripeness of your fruit - riper nectarines will require less time.

Remove the baking dish from the oven and let cool for just a minute or two. Top each warm nectarine half with a scoop of vanilla ice cream. Spoon the hot pan juices over the ice cream and nectarines, or drizzle with any reserved sauce. Serve immediately while the contrast between the warm fruit and cold ice cream is at its best.
