Peel the potatoes and cut them into fries measuring 0.5–1 cm in width.

Place the cut fries in a large bowl of ice-cold water and soak for at least 30 minutes to remove excess starch.

Combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, white pepper, celery seeds, and salt in a bowl to form the Cajun seasoning.

Preheat oven to 200°C. Line a large baking tray with baking paper to prevent sticking.

Drain the potatoes and pat completely dry. Place fries in a clean dry bowl, add peanut oil and 2 tablespoons Cajun spice blend, stirring to ensure even coating.

Spread the fries on the prepared tray in a single, even layer without overlapping.

Bake for 30–35 minutes or until fries are golden and crispy.

Sprinkle an additional 1–2 teaspoons of Cajun spice blend over the baked fries and garnish with chopped parsley as desired before serving.

For air fryer cooking: Follow steps 1–5, then air fry fries at 200°C for approximately 15 minutes. Shake basket, add 1 tsp more seasoning, and air fry for another 5 minutes. Serve as above.
