Grilled Sausage Vegetable Packets (Print Version)

# Ingredients:

→ Vegetables

01 - 1 small red onion, sliced
02 - 1 red bell pepper, cut into strips
03 - 1 yellow bell pepper, cut into strips
04 - 2 zucchini, cut into 1/2-inch coins
05 - 12 baby red potatoes, cut into quarters

→ Protein

06 - 4 chicken sausages, cut into 1/2-inch coins

→ Seasoning

07 - 2 tablespoons olive oil
08 - 1/2 teaspoon dried oregano
09 - 1/2 teaspoon dried basil
10 - 1/4 teaspoon paprika
11 - 4 cloves garlic, chopped
12 - Kosher salt and black pepper to taste

# Instructions:

01 - Preheat gas grill to medium-high heat.
02 - Cut 8 sheets of heavy-duty aluminum foil, each about 12x18 inches. Layer two sheets for each packet, forming a total of four foil packets, and set aside.
03 - In a large bowl, mix the onion, bell peppers, zucchini, potatoes, and sausage. Add olive oil, oregano, basil, and paprika, then toss until coated evenly.
04 - Divide the vegetable and sausage mixture evenly among the four foil packets, placing the mixture in the center of each. Sprinkle chopped garlic on top and season with Kosher salt and black pepper to taste.
05 - Bring the short sides of the foil together and fold the seams twice. Tuck and seal the ends tightly to secure the packets.
06 - Place packets on the preheated grill and close the lid. Cook for 20-25 minutes, or until the vegetables are tender.
07 - Remove the packets carefully from the grill and serve warm.
