Homemade Fudgesicles Chocolate Pops (Print Version)

# Ingredients:

→ Dairy and Base

01 - 250 grams heavy cream (double cream)
02 - 250 grams whole milk

→ Sweeteners and Thickeners

03 - 2 tablespoons cornstarch
04 - 3 tablespoons brown sugar
05 - 3 tablespoons white sugar

→ Chocolate Components

06 - 3 tablespoons unsweetened cocoa powder
07 - 80 grams dark chocolate chips or chopped

→ Flavourings

08 - 1 teaspoon vanilla extract
09 - 0.25 teaspoon salt

# Instructions:

01 - Combine heavy cream and whole milk in a pot. Heat over medium-low until hot, ensuring the mixture does not boil.
02 - Remove 2 tablespoons of the hot milk mixture and stir thoroughly with cornstarch in a small dish until smooth. Return the slurry to the pot, whisking to incorporate.
03 - Add brown sugar, white sugar, unsweetened cocoa powder, dark chocolate, vanilla extract, and salt to the pot. Gently heat while stirring until the chocolate melts and the mixture thickens slightly.
04 - Remove the pot from the heat and set aside to cool for several minutes.
05 - Whisk the cooled mixture briefly to ensure even texture, then pour into popsicle molds. Freeze for at least 4 hours, or until solid.

# Notes:

01 - To prevent scorching, avoid overheating the milk during the initial warming phase.
02 - For a smoother texture, sift the cocoa powder before use to minimize lumps.
03 - Having all ingredients prepared in advance streamlines the process and helps maintain the correct texture.
04 - Freezing time varies by freezer and initial mixture temperature; ensure complete solidification before unmolding.
