Spray a small skillet with non-stick cooking spray and heat over medium heat. Crack an egg into the pan and cook to your preference. For over-easy eggs with runny yolks, cook until the whites are set but the yolk is still soft, about 2-3 minutes. For over-hard eggs with no runny yolk, cook until the yolk is completely set, about 3-4 minutes. Repeat with the second egg.

In a small bowl, use a fork to smash the avocado until you reach your desired consistency - either chunky or smooth. Season with sea salt and black pepper to taste. The avocado should be ripe enough to mash easily but still hold some texture.

Spread 2 tablespoons of hummus evenly on each piece of toasted bread, covering the surface completely. This creates a creamy base and prevents the bread from getting soggy from the avocado.

Divide the smashed avocado evenly between the two pieces of toast, spreading it on top of the hummus layer. Carefully place one cooked egg on top of each toast. Sprinkle the chopped grape tomatoes over both toasts.

Season the completed toasts with additional salt and pepper if desired. For an extra flavor boost, you can add a sprinkle of red pepper flakes, everything bagel seasoning, or fresh herbs. Serve immediately while the toast is still warm and the eggs are at their best temperature.
