Moambe Chicken Congo Style (Print Version)

# Ingredients:

01 - 2 lbs chicken drumsticks
02 - ½ onion, chopped
03 - 2 cloves garlic, minced
04 - 1 cup tomato sauce
05 - 3 tablespoons peanut butter or substitute with palm nut concentrate
06 - ½ cup palm oil for frying or substitute with olive oil
07 - ½ teaspoon cayenne pepper
08 - 1 teaspoon bouillon powder
09 - ½ teaspoon smoked paprika
10 - ½ teaspoon salt

# Instructions:

01 - Wash and pat dry the chicken drumsticks.
02 - Add palm oil (or olive oil) to a large pan and brown the chicken on both sides.
03 - Chop onions and mince garlic, and set aside.
04 - Saute onions and garlic in palm oil (or olive oil).
05 - Add tomato sauce, cayenne pepper, bouillon powder, smoked paprika, and salt to the pan.
06 - Add the chicken back to the pan and stir. Bring to a boil and simmer on low heat for 15 minutes. Add a little water if it begins to dry out.
07 - Remove the chicken and add peanut butter to the sauce. Stir until well combined.
08 - Return the chicken to the pan and simmer for an additional 5-10 minutes on low heat.

# Notes:

01 - For a healthier option, the chicken can be air-fried or baked instead of fried in oil.
02 - Add a habanero pepper if you prefer spicier flavors, or skip the pepper entirely if you don't like spice.
