Preheat oven to 245°C. Place a pizza stone or baking tray inside to heat thoroughly.

On a floured surface, stretch or roll out the pizza dough into a thin, even circle. Transfer onto parchment paper or a floured pizza peel.

Distribute mozzarella evenly over the dough. Dot surface with small pieces of gorgonzola. Sprinkle with fontina or taleggio cheese, then finish with parmesan. Drizzle olive oil over the cheese.

Carefully slide the topped dough onto the preheated stone or tray. Bake for 8–12 minutes, until cheese is bubbly and golden and the base is crisp.

Remove pizza from oven. Garnish with chopped parsley or basil if desired. Slice and serve immediately while hot.
