Quick Easy Pasta Salad (Print Version)

# Ingredients:

→ Salad Base

01 - 450 grams rotini or other short pasta
02 - 1 medium cucumber, chopped
03 - 300 grams grape tomatoes, halved
04 - 1 small bell pepper, chopped
05 - 40 grams finely diced red onion
06 - 170 grams crumbled feta cheese
07 - 50 grams sliced black olives
08 - 3 tablespoons chopped fresh parsley
09 - Salt and black pepper, to taste

→ Dressing

10 - 240 millilitres Italian dressing

# Instructions:

01 - Bring a large pot of water to a boil. Add a generous pinch of salt and the pasta. Cook according to package instructions until al dente. Drain thoroughly in a colander and rinse under cold water to stop the cooking process.
02 - Chop the cucumber and bell pepper, halve the grape tomatoes, and finely dice the red onion. Set aside.
03 - In a large mixing bowl, combine the cooled pasta, chopped vegetables, Italian dressing, crumbled feta cheese, sliced olives, and chopped fresh parsley. Season with salt and black pepper to taste.
04 - Toss all components until evenly coated. Serve immediately or refrigerate for one hour to allow the flavours to meld.

# Notes:

01 - For optimal flavour, allow the salad to chill for at least one hour before serving.
02 - Homemade Italian dressing may be prepared by whisking together 120 ml olive oil, 60 ml red wine vinegar, 1 teaspoon honey, 1 teaspoon Dijon mustard, 1 teaspoon Italian seasoning, 1 minced garlic clove, and salt and pepper to taste.
