Wash and thoroughly dry the Medjool dates. Remove the pits and measure the required amount after pitting.

Roughly chop the pitted dates and place in a food processor with almond flour, desiccated coconut, sea salt flakes, and vanilla extract.

Blend until the mixture is smooth and begins to come together. If the consistency is too dry to form balls, add an additional date or two and blend again.

Place the extra desiccated coconut into a shallow bowl. Roll the mixture into small, even balls, then roll each ball in the coconut to coat.

Transfer the bliss balls to an airtight container and refrigerate.
