Combine strawberries and applesauce in a blender. Blend on high speed until fully pureed and uniform in color.

Add the puree to a large heat-proof mixing bowl. Sprinkle gelatin powder evenly across the surface and whisk until fully incorporated. The mixture will thicken slightly.

Using a double boiler, gently heat the mixture until the gelatin dissolves completely. The mixture should feel warm but not hot or boiling. Let cool at room temperature for about 10 minutes.

Transfer the mixture to the bowl of a stand mixer fitted with a wire whisk attachment. Beat on the highest speed for about 15 minutes until the mixture quadruples in volume and forms soft peaks.

Pour the whipped mixture into the prepared pan, using a spatula to spread it evenly and smooth the surface. Chill in the refrigerator for at least 1 hour until set.

Keep the dessert refrigerated until ready to serve. Optionally decorate with whipped cream frosting or similar toppings. Slice with a sharp knife before serving. Store leftovers in the fridge.
