Baked Stuffed Apples Cinnamon Honey (Print Version)

# Ingredients:

→ For the Apples

01 - 6 apples (honeycrisp or fuji)
02 - 2⁄3 cup coconut sugar or brown sugar
03 - 1⁄2 cup rolled oats
04 - 1⁄4 cup chopped pecans
05 - 2 teaspoons cinnamon
06 - 1⁄2 teaspoon nutmeg
07 - 4 tablespoons melted butter
08 - 1⁄2 cup apple juice

→ For the Sauce

09 - 1⁄4 cup honey
10 - 1⁄2 teaspoon cinnamon
11 - 1⁄2 teaspoon vanilla

# Instructions:

01 - Whisk together honey, cinnamon, and vanilla until well combined. Set aside for later use.
02 - Preheat oven to 400°F and spray a baking dish with non-stick cooking spray.
03 - Core the apples leaving sides 1⁄2-3⁄4 inch thick and place them in the prepared baking dish.
04 - Mix coconut sugar, rolled oats, pecans, cinnamon, nutmeg, and melted butter. Divide mixture evenly between cored apples. Pour apple juice around the apples in the dish.
05 - Cover dish with aluminum foil and bake for 40-45 minutes. Uncover and bake for an additional 5 minutes to crisp the filling. Serve warm with vanilla ice cream and drizzle with prepared honey sauce.

# Notes:

01 - Start checking apples at 30 minutes as cooking time may vary
02 - Recipe can be halved to make 4 apples instead of 6
03 - Deeper cored apples will cook faster
