In a large bowl, add the cubed chicken breasts. Drizzle with olive oil and sprinkle with paprika, garlic powder, kosher salt, and black pepper. Toss everything together until the chicken pieces are evenly coated with the oil and seasonings.

Take your pre-soaked wooden skewers and thread 4-5 pieces of the seasoned chicken onto each one. Leave a small space at the bottom of each skewer to use as a handle. Continue until all chicken pieces are skewered.

In a small bowl, combine the mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Mix well until all ingredients are thoroughly incorporated. This will make approximately 1¾ cups of sauce. Divide the sauce in half by pouring it into two separate bowls - one for brushing onto the raw chicken before cooking, and one for serving afterwards.

Take one portion of the bang bang sauce and brush it generously over all sides of the chicken skewers. Reserve the other portion of sauce for serving after cooking.

Place the sauced chicken skewers in your air fryer basket in a single layer, making sure they don't touch each other. Depending on the size of your air fryer, you may need to cook them in multiple batches. Air fry at 400°F for 11-12 minutes, flipping the skewers halfway through the cooking time.

Verify that the chicken is fully cooked by checking that it has reached an internal temperature of 165°F using a meat thermometer. The chicken should be opaque throughout with no pink remaining.

Transfer the cooked skewers to a serving plate. Drizzle or brush the reserved bang bang sauce over the hot chicken skewers. Serve immediately while still warm for the best flavor and texture.
