Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

Wash and dry carrots, then cut them diagonally into 1⁄2-inch slices. Place cut carrots in a bowl and set aside.

Heat butter in a pot over medium heat. Whisk continuously until butter bubbles and turns golden brown, about 2-3 minutes. Add maple syrup and minced garlic, whisking to combine.

Pour half of the brown butter maple sauce over the carrots and toss to coat. Spread carrots on prepared baking sheet in a single layer and season with salt and pepper. Roast for 15-20 minutes or until tender when pierced with a fork.

Drizzle remaining sauce over the roasted carrots or serve it on the side. Garnish with fresh thyme sprigs before serving.
