Buffalo Honey Mustard Chicken Wings (Print Version)

# Ingredients:

→ Wings

01 - 2 pounds chicken wings (flats and drumettes)
02 - 1/4 cup yellow mustard
03 - 1/4 cup buffalo sauce
04 - 1 cup all-purpose flour
05 - Vegetable oil for deep frying

→ Honey Mustard Sauce

06 - 1/4 cup (1/2 stick) unsalted butter
07 - 1/4 cup honey
08 - 2 tablespoons fresh lemon juice (about 1 medium lemon)
09 - 1 teaspoon kosher salt

# Instructions:

01 - In a large bowl, toss the chicken wings with yellow mustard and buffalo sauce until well coated. Then, in a separate bowl, dredge each wing in flour, shaking off excess. Place the coated wings on a parchment-lined baking sheet.
02 - Heat vegetable oil in a large pot to 375°F (use enough oil to fill halfway). Fry wings in small batches (2-3 at a time) for 6-8 minutes until golden and crispy. Place fried wings on a wire rack set over a baking sheet.
03 - Once all wings are done, bring oil back to 375°F and fry wings again for 2 minutes for extra crispiness. Return to wire rack.
04 - In a medium saucepan over medium heat, melt the butter. Add honey, fresh lemon juice, and kosher salt, stirring until well combined.
05 - Place the crispy wings in a large bowl and pour the warm honey-butter sauce over them. Toss until all wings are evenly coated.
