Caesar Dressing (Print Version)

# Ingredients:

01 - 3/4 cup mayonnaise
02 - 2 tablespoons fresh lemon juice
03 - 2 cloves garlic, minced
04 - 1 teaspoon Dijon mustard
05 - 1 teaspoon Worcestershire sauce
06 - 1 teaspoon anchovy paste, or 2 anchovies, minced
07 - 2 tablespoons finely grated Parmesan cheese
08 - Kosher salt and freshly ground black pepper, to taste

# Instructions:

01 - In a small bowl, add the mayonnaise, fresh lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, anchovy paste (or minced anchovies), and finely grated Parmesan cheese.
02 - Whisk all the ingredients together until thoroughly combined and smooth. Make sure the anchovy paste or minced anchovies are completely incorporated throughout the dressing.
03 - Add kosher salt and freshly ground black pepper to taste. Start with a small amount, whisk, and taste, then adjust as needed. The Parmesan and anchovy already add saltiness, so you may not need much additional salt.
04 - Use the dressing immediately on your favorite Caesar salad, or for the best flavor development, refrigerate it in an airtight container for at least an hour before using. The dressing will keep well in the refrigerator for up to one week.
