# Ingredients:

→ Cookie Base

01 - 1 can chickpeas, drained and rinsed
02 - 1/4-1/3 cup maple syrup
03 - 1 cup nut butter (almond, peanut, cashew, or seed butter)
04 - 1 teaspoon vanilla
05 - 1 tablespoon baking powder

→ Mix-ins and Toppings

06 - 1/2 cup chocolate chips, plus extra for topping
07 - Flaky sea salt for sprinkling (optional)

# Instructions:

01 - Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or silicon mat
02 - Drain and rinse chickpeas, removing any loose skins
03 - Blend chickpeas, maple syrup, nut butter, vanilla, and baking powder in a food processor for 2-3 minutes until smooth and creamy
04 - Let mixture cool slightly, then fold in chocolate chips
05 - Scoop dough, roll into balls, place on baking sheet, and flatten slightly. Top with extra chocolate chips if desired
06 - Bake for 10-12 minutes, then sprinkle with flaky sea salt if desired
