Chili Lime Glazed Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 2 pounds boneless skinless chicken thighs (6-8 thighs)
02 - 2 tablespoons vegetable oil, for cooking

→ Marinade and Glaze

03 - 1⁄2 cup fresh lime juice
04 - 1⁄4 cup honey
05 - 2 tablespoons fresh cilantro, chopped
06 - 2 tablespoons garlic, minced
07 - 1 tablespoon chili powder
08 - 1 tablespoon ground cumin
09 - 1 tablespoon onion powder
10 - 1 teaspoon kosher salt
11 - 1⁄2 teaspoon cayenne pepper

# Instructions:

01 - In a large bowl, combine lime juice, honey, cilantro, garlic, chili powder, cumin, onion powder, salt, and cayenne. Mix well to combine.
02 - Add chicken thighs to the marinade, cover, and refrigerate for 20 minutes up to 4 hours.
03 - Preheat oven to 400°F. Reserve the marinade for later use.
04 - Heat oil in a large oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until browned.
05 - Transfer skillet to preheated oven and bake for 8-10 minutes until chicken reaches 165°F internally.
06 - While chicken cooks, bring reserved marinade to a boil in a saucepan, then reduce heat and simmer 5-10 minutes until thickened.
07 - Brush the thickened glaze over the cooked chicken and serve warm.

01 - Can be cooked in air fryer at 380°F for 14-16 minutes
02 - Also works great on the grill for 6-8 minutes per side
