# Ingredients:

→ Salad Base

01 - 2 cups shredded chicken (homemade or store bought)
02 - ¼ cup finely diced red onion
03 - 1-2 celery stalks, diced
04 - 2 tablespoons chopped fresh cilantro

→ Creamy Chipotle Dressing

05 - ¼ cup mayonnaise
06 - ¼ cup plain Greek yogurt
07 - 2 tablespoons fresh lime juice
08 - 1 chopped chipotle pepper in adobo sauce
09 - 2 tablespoons adobo sauce
10 - 1 minced garlic clove

→ Seasonings

11 - ½ teaspoon smoked paprika
12 - ½ teaspoon salt
13 - ¼ teaspoon black pepper

# Instructions:

01 - In a large bowl, combine the shredded chicken, diced red onion, chopped celery, and fresh cilantro. Set aside.
02 - In a separate bowl, blend together mayonnaise, Greek yogurt, lime juice, chopped chipotle pepper, adobo sauce, minced garlic, smoked paprika, salt, and black pepper until smooth.
03 - Pour the chipotle dressing over the chicken mixture and gently toss until everything is well coated. Serve right away or chill for deeper flavors.

# Notes:

01 - For homemade shredded chicken: Season chicken tenders with salt and pepper, bake at 400°F for 15-18 minutes, then shred with two forks
02 - Adjust the heat level by controlling the amount of chipotle seeds - remove all for mild, use half for medium, or include all for extra spicy
03 - Serve in sandwiches, wraps, or with tortilla chips
