Easy Chipotle Chicken Salad (Print Version)

# Ingredients:

→ Base

01 - 2 cups shredded chicken, homemade or store bought
02 - ¼ cup red onion, finely diced
03 - 1-2 celery stalks, diced
04 - 2 tablespoons cilantro, chopped

→ Creamy Chipotle Dressing

05 - ¼ cup mayonnaise
06 - ¼ cup plain Greek yogurt
07 - 2 tablespoons lime juice
08 - 1 chipotle pepper in adobo sauce, chopped
09 - 2 tablespoons adobo sauce
10 - 1 garlic clove, minced
11 - ½ teaspoon smoked paprika
12 - ½ teaspoon salt
13 - ¼ teaspoon black pepper

# Instructions:

01 - In a large bowl, combine shredded chicken, diced celery, finely diced red onion, and chopped cilantro.
02 - In a small bowl, mix together mayonnaise, Greek yogurt, lime juice, chopped chipotle pepper, adobo sauce, minced garlic, smoked paprika, salt, and black pepper.
03 - Pour the chipotle dressing over the chicken mixture and toss until everything is well combined.
04 - Serve immediately as a sandwich filling, wrap, or with tortilla chips.

01 - For homemade shredded chicken, season chicken tenders with salt and pepper and bake at 400°F for 15-18 minutes
02 - Adjust heat level by controlling chipotle pepper seeds - remove all for mild, use half for medium, or all for spicy
