Chocolate Raspberry Mousse Cake (Print Version)

# Ingredients:

→ Chocolate Cake

01 - 1 cup all-purpose flour
02 - 2 tablespoons cornstarch
03 - ½ cup unsweetened cocoa powder (dutch process)
04 - 1 teaspoon baking powder
05 - ½ teaspoon baking soda
06 - ½ teaspoon salt
07 - ½ cup canola or vegetable oil
08 - ½ cup white granulated sugar
09 - ⅓ cup brown sugar, packed
10 - 2 large eggs, room temperature
11 - 1 teaspoon pure vanilla extract
12 - 1 teaspoon white vinegar
13 - ½ cup buttermilk, room temperature
14 - ⅓ cup sour cream, room temperature
15 - ½ cup hot water

→ Raspberry Mousse

16 - 1 (3.4 oz) box vanilla pudding
17 - 1 cup cold milk
18 - ⅓ cup ground freeze-dried raspberries (1 oz bag)
19 - 2 cups heavy cream
20 - 1 teaspoon pure vanilla extract

→ Chocolate Whipped Cream

21 - 1 cup heavy cream
22 - ¼ cup powdered sugar
23 - 2 tablespoons unsweetened cocoa powder
24 - 1 teaspoon pure vanilla extract

# Instructions:

01 - Preheat oven to 350°F. Spray a 9-inch springform pan with baking spray, line bottom with parchment paper, and spray again.
02 - Sift together flour, cornstarch, cocoa powder, baking powder, baking soda, and salt in a medium bowl.
03 - In a large bowl, combine oil, both sugars, eggs, vanilla, vinegar, buttermilk, and sour cream. Slowly whisk in hot water, then add dry ingredients and mix until smooth.
04 - Pour batter into prepared pan and bake for 30-37 minutes until a toothpick comes out clean. Cool in pan for 10 minutes, then transfer to cooling rack.
05 - Beat heavy cream and vanilla until stiff peaks form. Separately, mix pudding mix with milk and ground freeze-dried raspberries until thick. Gently fold in whipped cream.
06 - Level cake top if needed. Place in clean, lined springform pan, add mousse layer, and spread evenly. Chill for at least 6 hours or overnight.
07 - Make chocolate whipped cream by beating heavy cream, powdered sugar, cocoa powder, and vanilla until medium peaks form. Spread over chilled mousse layer.
