Cowboy Butter Swim Biscuits (Print Version)

# Ingredients:

→ For the Biscuits

01 - 21⁄2 cups (312.5g) all-purpose flour
02 - 4 teaspoons baking powder
03 - 1⁄2 teaspoon kosher salt
04 - 1 cup (113g) medium cheddar cheese, shredded
05 - 2 cups (490g) buttermilk

→ For Topping

06 - 1 recipe cowboy butter, melted (reserve 1 tablespoon for topping)

# Instructions:

01 - Preheat oven to 450°F. Coat an 8x8-inch baking dish with nonstick cooking spray.
02 - In a medium bowl, combine flour, baking powder, salt, and shredded cheddar cheese.
03 - Pour buttermilk into the dry ingredients. Stir gently until just combined, being careful not to overmix the batter.
04 - Pour most of the melted cowboy butter into the prepared baking dish, reserving 1 tablespoon for later. Spread the biscuit dough evenly in the pan and cut into 9 squares.
05 - Bake for 26-28 minutes until golden brown on top. Let the biscuits absorb the butter before serving.
