Easy Chicken Caprese Salad (Print Version)

# Ingredients:

→ Chicken

01 - 2-3 large boneless skinless chicken breasts (about 2 pounds), pounded to even thickness
02 - 1 tablespoon olive oil
03 - 1 teaspoon kosher salt
04 - 1 teaspoon fresh cracked pepper

→ Salad

05 - 5 cups Romaine lettuce (about 2 heads), washed and torn into bite-sized pieces
06 - 1 medium avocado, peeled, pitted, and sliced
07 - 1 cup cherry tomatoes, halved
08 - ½ cup mini mozzarella cheese balls
09 - ¼ cup basil leaves, thinly sliced
10 - ½ cup balsamic vinaigrette

# Instructions:

01 - Pat chicken dry with paper towel and season with salt and pepper on all sides.
02 - Heat oil in large skillet over medium-high heat. Cook chicken 4-6 minutes per side until internal temperature reaches 165°F.
03 - Let chicken rest for 5 minutes, then slice.
04 - In a large bowl, combine lettuce, avocado, tomatoes, mozzarella balls, and basil leaves.
05 - Top salad with sliced chicken and balsamic vinaigrette. Toss and serve immediately.
