01 - 1 recipe (1 cup) Firecracker Sauce, divided
02 - 1 ½ pounds sirloin or ribeye steak, cut into 1-inch cubes
03 - ½ teaspoon kosher salt
04 - ¼ teaspoon black pepper
05 - 2 tablespoons vegetable oil
06 - Green onions, for garnish

# Instructions:

01 - In a large bowl, season the cubed steak with salt and pepper. Pour ¼ cup of the firecracker sauce over the steak and toss until all pieces are coated. Let the steak marinate at room temperature for 30 minutes to absorb the flavors.
02 - Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the marinated steak bites in a single layer, being careful not to overcrowd the pan (work in batches if necessary). Sear for 1-2 minutes per side until the steak is browned and caramelized. Remove the seared steak bites from the skillet and set aside.
03 - Reduce the heat to medium and pour the remaining firecracker sauce into the same skillet. Let it simmer for 1-2 minutes until it thickens slightly, allowing it to pick up the flavorful browned bits from the bottom of the pan.
04 - Return the seared steak bites to the skillet and toss to coat them evenly in the thickened sauce. Cook for an additional 30 seconds to warm everything through, then remove from heat.
05 - Transfer the steak bites to a serving dish, drizzling any extra sauce from the pan over the top for added flavor. Garnish with chopped green onions if desired, and serve immediately while hot.
