Healthy Avocado Brownies (Print Version)

# Ingredients:

→ Base

01 - 1 medium avocado (about 1/2 cup)
02 - 1/2 cup cacao
03 - 2 chia eggs (2 tablespoons chia seeds + 6 tablespoons water)
04 - 1/2 cup coconut sugar
05 - 1/4 cup ground flax
06 - 1/2 cup almond butter
07 - 2 teaspoons baking powder
08 - 1 teaspoon vanilla
09 - 1/4 teaspoon salt

→ Mix-ins and Toppings

10 - 1/2 cup non-dairy chocolate chips
11 - Matcha almond butter for topping (optional)

# Instructions:

01 - Preheat oven to 350°F. Line an 8x8 baking dish with parchment paper. Make chia eggs by mixing 2 tablespoons chia seeds with 6 tablespoons water; let sit for 10 minutes to thicken.
02 - Add all ingredients except chocolate chips to a food processor. Blend for 2-3 minutes until well incorporated. The batter will be thick.
03 - Fold chocolate chips into the batter, then pour into prepared baking dish. Spread evenly.
04 - Top with matcha almond butter if desired. Create a swirl design using a toothpick.
05 - Bake for 45 minutes. Remove from oven and allow to cool completely before cutting.
