Preheat oven to 350°F. Line an 8x8 baking dish with parchment paper. Make chia eggs by mixing 2 tablespoons chia seeds with 6 tablespoons water; let sit for 10 minutes to thicken.

Add all ingredients except chocolate chips to a food processor. Blend for 2-3 minutes until well incorporated. The batter will be thick.

Fold chocolate chips into the batter, then pour into prepared baking dish. Spread evenly.

Top with matcha almond butter if desired. Create a swirl design using a toothpick.

Bake for 45 minutes. Remove from oven and allow to cool completely before cutting.
