Honey Balsamic Roasted Carrots (Print Version)

# Ingredients:

01 - 2 pounds carrots, peeled and sliced diagonally (2-inch pieces)
02 - 2 tablespoons balsamic vinegar
03 - 2 tablespoons honey
04 - 1 tablespoon extra virgin olive oil
05 - 1 teaspoon minced garlic
06 - 1⁄4 teaspoon kosher salt
07 - 1⁄4 teaspoon black pepper

→ Garnish

08 - Chopped fresh parsley

# Instructions:

01 - Preheat the oven to 425°F and line a baking sheet with parchment paper.
02 - In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper until well combined.
03 - Place carrots in a large bowl and pour half of the balsamic mixture over them. Toss well to ensure even coating.
04 - Spread the seasoned carrots in a single layer on the prepared baking sheet and bake for 20 minutes.
05 - Brush carrots with some of the reserved balsamic mixture and continue baking for 20-25 minutes more, until tender. Finish by drizzling with any remaining glaze and garnishing with chopped parsley.
