Preheat the oven to 425°F and line a baking sheet with parchment paper.

In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper until well combined.

Place carrots in a large bowl and pour half of the balsamic mixture over them. Toss well to ensure even coating.

Spread the seasoned carrots in a single layer on the prepared baking sheet and bake for 20 minutes.

Brush carrots with some of the reserved balsamic mixture and continue baking for 20-25 minutes more, until tender. Finish by drizzling with any remaining glaze and garnishing with chopped parsley.
