Lemon Sugar Cookies (Print Version)

# Ingredients:

→ Cookie Dough

01 - 2¾ cups all-purpose flour
02 - 1 teaspoon baking soda
03 - ½ teaspoon baking powder
04 - ½ teaspoon salt
05 - Zest of 2 large lemons
06 - 1½ cups granulated sugar
07 - 1 cup unsalted butter, room temperature
08 - 1 large egg
09 - ½ teaspoon vanilla extract
10 - 2 tablespoons fresh lemon juice

→ For Rolling

11 - ½ cup granulated sugar

# Instructions:

01 - Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
02 - In a small bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
03 - In a small bowl, combine sugar and lemon zest. Rub together with your fingers until fragrant.
04 - Beat butter and lemon-sugar mixture until smooth and creamy. Add egg, vanilla extract, and lemon juice, mixing until combined. Gradually mix in dry ingredients until just combined.
05 - Roll dough into tablespoon-sized balls, coat in sugar, and place on prepared baking sheets 1½ inches apart. Bake for 8-10 minutes until edges are slightly brown. Let cool on baking sheets for 2 minutes before transferring to cooling rack.

# Notes:

01 - Store cookies with a slice of bread in an airtight container to keep them soft
02 - Don't overmix the dough for best texture
03 - Cookies should be slightly brown around the edges when done
