Start by preheating your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper or give it a good coating of non-stick spray.

In a medium bowl, combine your rolled oats, flour, baking soda, and salt. Give everything a good whisk to ensure it's well mixed.

In a large bowl, mix together the peanut butter, brown sugar, honey (or maple syrup), softened butter, egg, and vanilla until you've got a smooth, well-combined mixture.

Gradually add your dry oat mixture into the bowl with the wet ingredients. Mix until everything just comes together, then gently fold in those chocolate chips.

Spread the batter evenly in your prepared pan. Pop it in the oven and bake for 18-22 minutes, until golden on top. A toothpick inserted in the center should come out mostly clean. Let them cool completely in the pan before cutting into squares.
