Chocolate Chip Peanut Butter Bars (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 11⁄2 cups old-fashioned rolled oats
02 - 1⁄2 cup all-purpose flour or whole wheat flour
03 - 1⁄2 teaspoon baking soda
04 - 1⁄4 teaspoon salt

→ Wet Ingredients

05 - 1⁄2 cup creamy or chunky peanut butter
06 - 1⁄2 cup packed brown sugar
07 - 1⁄4 cup honey or maple syrup
08 - 1⁄4 cup softened butter
09 - 1 large egg
10 - 1 teaspoon vanilla extract

→ Mix-ins

11 - 1⁄2 cup mini chocolate chips or regular chocolate chips

# Instructions:

01 - Start by preheating your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper or give it a good coating of non-stick spray.
02 - In a medium bowl, combine your rolled oats, flour, baking soda, and salt. Give everything a good whisk to ensure it's well mixed.
03 - In a large bowl, mix together the peanut butter, brown sugar, honey (or maple syrup), softened butter, egg, and vanilla until you've got a smooth, well-combined mixture.
04 - Gradually add your dry oat mixture into the bowl with the wet ingredients. Mix until everything just comes together, then gently fold in those chocolate chips.
05 - Spread the batter evenly in your prepared pan. Pop it in the oven and bake for 18-22 minutes, until golden on top. A toothpick inserted in the center should come out mostly clean. Let them cool completely in the pan before cutting into squares.

# Notes:

01 - For extra chewy bars, try underbaking by 2-3 minutes
02 - Feel free to swap chocolate chips for dried fruit or nuts
03 - These bars stay fresh for up to a week in an airtight container
