01 -
Preheat your grill to high heat. Make sure the grates are clean and lightly oiled to prevent sticking.
02 -
In a medium bowl, combine the garlic powder, chili powder, salt, ground cumin, paprika, and crushed red pepper. Mix well to create an evenly blended spice rub.
03 -
Add the chicken thighs to the bowl with the spice mixture and toss to coat thoroughly. Use your hands to rub the seasonings onto both sides of each chicken thigh, ensuring even coverage.
04 -
Place the seasoned chicken thighs on the preheated grill and cook for 3-5 minutes on each side with direct high heat. This initial searing helps lock in juices and creates nice grill marks.
05 -
Turn all but one burner off to create an indirect heat zone. Move the chicken to this cooler area of the grill. Brush the top side of each chicken thigh with half of the honey.
06 -
Close the grill lid and continue cooking with indirect heat for 5 minutes, allowing the honey to begin caramelizing. Flip the chicken thighs and brush the other side with the remaining honey. Continue cooking for about 5 more minutes, or until the chicken reaches an internal temperature of 165°F and the honey forms a glossy glaze.
07 -
Remove the chicken from the grill and let rest for a few minutes before serving. This allows the juices to redistribute throughout the meat. Serve warm as a main dish with your favorite sides.
