Tuscan Lemon Chicken (Print Version)

# Ingredients:

→ Marinade

01 - 2 tablespoons extra virgin olive oil
02 - 1 shallot, diced
03 - 3 cloves garlic, minced
04 - 2 tablespoons chopped fresh parsley leaves
05 - 1 tablespoon chopped fresh rosemary
06 - 1 tablespoon chopped fresh thyme leaves
07 - 2 tablespoons freshly squeezed lemon juice
08 - 1 tablespoon lemon zest
09 - 1 teaspoon kosher salt
10 - 1 teaspoon freshly ground black pepper

→ For Cooking

11 - 2 pounds boneless, skinless chicken thighs
12 - 1 tablespoon extra virgin olive oil
13 - Salt and pepper to taste

# Instructions:

01 - Combine 2 tablespoons olive oil, shallot, garlic, herbs, lemon juice, lemon zest, salt and pepper in a medium bowl.
02 - Place chicken in a Ziploc bag with marinade mixture. Marinate for at least 2 hours or overnight, turning occasionally.
03 - Drain chicken from marinade. Brush with remaining tablespoon olive oil and season with additional salt and pepper.
04 - Cook on preheated medium-high heat grill, turning occasionally, until internal temperature reaches 165°F (about 10 minutes).
05 - Serve immediately while hot.

01 - Can be marinated overnight for best results
02 - Use fresh herbs for optimal flavor
