Burrata with Tomatoes Pesto (Print Version)

# Ingredients:

→ Garlic Toasts

01 - 1 loaf rustic bread or French baguette
02 - Olive oil for drizzling on bread
03 - 2 peeled garlic cloves

→ Burrata and Toppings

04 - 16 oz grape or cherry tomatoes, halved
05 - 1 tablespoon olive oil
06 - Kosher salt and freshly ground black pepper, to taste
07 - 8 ounces burrata
08 - 3 tablespoons basil pesto
09 - Fresh basil, for garnish

# Instructions:

01 - Preheat the oven to 400°F (200°C). Slice the bread into 1-inch thick slices. Drizzle olive oil on both sides and place the slices in a single layer on a large baking sheet. Toast for 10 minutes, flipping halfway through, until golden on both sides. Remove from oven and rub garlic cloves over the toasts to infuse garlic flavor.
02 - Place halved tomatoes in a small bowl. Drizzle with olive oil and season with kosher salt and black pepper to taste. Mix gently to coat evenly.
03 - Place the burrata on a serving platter. Spoon the prepared tomatoes around the burrata and drizzle with basil pesto. Season with additional salt and pepper if desired. Garnish with fresh basil leaves. Arrange the garlic toasts around the platter for serving.

# Notes:

01 - You can grill the bread during summer instead of toasting in the oven for a smokier flavor.
