Crab Boil with Seasoned Butter (Print Version)

# Ingredients:

→ Broth and Aromatics

01 - 7.6 litres water
02 - 1.9 litres chicken broth
03 - 1 large onion, cut in wedges
04 - 8 garlic cloves, whole and peeled
05 - 120 grams granulated sugar
06 - 28 grams Old Bay Seasoning
07 - 8 grams paprika
08 - 18 grams salt
09 - 2 lemons, halved

→ Main Ingredients

10 - 1.8 kilograms small red and yellow potatoes
11 - 680 grams smoked sausage, sliced
12 - 6 ears corn, halved
13 - 450 grams raw shrimp, peeled, tail on
14 - 4 Dungeness crab sections, pre-cooked

→ Seasoned Butter Sauce

15 - 225 grams unsalted butter
16 - 1 lemon, juiced
17 - 4 garlic cloves, crushed
18 - 5 grams Old Bay seafood seasoning
19 - hot sauce, to taste (optional)
20 - fresh parsley, for garnish
21 - lemon wedges, for garnish (optional)

# Instructions:

01 - Combine water, chicken broth, onion wedges, whole garlic cloves, sugar, Old Bay seasoning, paprika, salt, and halved lemons in a large stock pot. Bring to a rapid boil and cook for 10 minutes to infuse flavours.
02 - Add potatoes, sliced smoked sausage, and corn to the boiling broth. Continue boiling for 15–20 minutes, checking at 15 minutes to ensure potatoes are not overly soft. Potatoes should not be fork-tender at this stage.
03 - While the main ingredients are boiling, melt butter in a small saucepan over low heat. Whisk in lemon juice, crushed garlic, Old Bay seasoning, and hot sauce, if using. Keep warm until serving.
04 - Introduce crab sections and shrimp to the pot. Boil for an additional 7 minutes, ensuring seafood cooks evenly.
05 - Remove and thoroughly drain all contents. Discard onion wedges, lemons, and garlic cloves. Arrange remaining ingredients on a large platter or baking sheet. Generously brush with seasoned butter sauce, garnish with fresh parsley and lemon wedges, and serve extra sauce on the side for dipping.

01 - Monitor potato doneness closely to avoid overcooking, as the final boil will continue to soften them.
02 - Assemble and serve immediately for optimal texture and temperature.
