No Bake Key Lime Cheesecake Jars (Print Version)

# Ingredients:

→ Crust

01 - 1 cup granola (blended)

→ Filling

02 - 1.5 cups cottage cheese (preferably Good Culture low fat 2%)
03 - 1/2 cup plain Greek yogurt
04 - 1 tsp vanilla bean paste (or vanilla extract)
05 - 1/4 cup maple syrup
06 - 2 tbsp key lime juice
07 - Zest from 2 limes

→ Topping

08 - 1/2 cup heavy whipping cream
09 - 1 tsp vanilla bean paste
10 - Extra lime zest and lime wedges for garnish

# Instructions:

01 - Add granola to a blender and blend until crushed and you have a fine powder. Divide the crushed granola evenly among three 8oz glass jars to form the base layer.
02 - In a food processor add all of the filling ingredients: cottage cheese, Greek yogurt, vanilla bean paste, maple syrup, key lime juice, and lime zest. Process for 12-15 seconds, or just until smooth and creamy. Be careful not to over-process or you'll end up with a watery texture.
03 - Divide the creamy lime filling evenly among the three jars, spooning it on top of the granola crust. Place the jars in the refrigerator while you make the whipped cream topping.
04 - In a stand mixer, add the heavy whipping cream and whisk on high speed for 3-4 minutes until soft peaks form. Add the vanilla bean paste during the last minute of whipping. If you prefer sweeter whipped cream, add a teaspoon or more of maple syrup.
05 - Transfer the whipped cream to a piping bag, cut off the corner, and pipe decoratively onto each cheesecake jar. Garnish with additional lime zest and a small lime wedge for a beautiful presentation.
06 - Enjoy immediately or cover with lids and refrigerate until ready to serve. These cheesecake jars can be prepared a few hours ahead or even the day before serving.

01 - The brand of cottage cheese matters for best results - Good Culture 2% has an ideal thick and creamy texture for blending.
02 - Don't over-blend the filling - 10-15 seconds is all you need for a smooth texture without making it watery.
