# Ingredients:

→ For the Steak

01 - 2 ribeye or sirloin steaks (8 oz each)
02 - 2 tablespoons olive oil
03 - Salt and pepper, to taste
04 - 1 teaspoon garlic powder (optional, for extra flavor)

→ For the Green Sauce

05 - 1/2 cup fresh parsley, packed
06 - 1/4 cup fresh cilantro
07 - 1 tablespoon fresh oregano (or basil)
08 - 2 tablespoons fresh lemon juice
09 - 1/4 cup extra virgin olive oil
10 - 2 tablespoons red wine vinegar (or apple cider vinegar)
11 - 2 cloves garlic, minced
12 - 1/2 teaspoon chili flakes (optional, for heat)
13 - Salt and pepper, to taste

→ For the Mashed Sweet Potatoes

14 - 2 large sweet potatoes, peeled and cut into chunks
15 - 1/4 cup unsalted butter (or olive oil for dairy-free)
16 - 1/2 cup heavy cream or milk (or coconut milk for a dairy-free option)
17 - Salt and pepper, to taste
18 - 1/4 teaspoon cinnamon (optional, for extra flavor)

# Instructions:

01 - In a large pot, bring the sweet potato chunks to a boil in salted water. Cook for 12-15 minutes, or until the potatoes are fork-tender. Drain the sweet potatoes and return them to the pot. Add the butter, heavy cream (or coconut milk), cinnamon (if using), salt, and pepper. Mash the sweet potatoes until smooth and creamy, using a potato masher or a hand mixer for a silky texture. Set aside and keep warm.
02 - In a blender or food processor, combine the parsley, cilantro, oregano (or basil), lemon juice, olive oil, red wine vinegar, garlic, chili flakes (if using), salt, and pepper. Blend until smooth, adjusting the seasoning to taste. If the sauce is too thick, add a little more olive oil or water to thin it out to your desired consistency.
03 - Preheat a grill or skillet over medium-high heat. Season the steaks generously with salt, pepper, and garlic powder (if using). Cook the steaks for 4-6 minutes per side, or until they reach your desired doneness (for medium-rare, aim for an internal temperature of 130°F). Once cooked, remove the steaks from the heat and let them rest for a few minutes before slicing.
04 - Spoon a generous portion of mashed sweet potatoes onto each plate. Place the steak slices on top or alongside the mashed sweet potatoes. Drizzle the green sauce over the steak or serve it on the side for dipping.
