Creamy Cucumber Salad Greek Yogurt (Print Version)

# Ingredients:

→ For the Salad

01 - 2 Persian cucumbers, thinly sliced
02 - ⅓ cup red onion, thinly sliced (about ¼ of an onion)

→ For the Dressing

03 - ½ cup plain Greek yogurt
04 - 1 Tbsp lemon juice
05 - 1 Tbsp olive oil
06 - 1 garlic clove, minced
07 - 2 Tbsp fresh dill, chopped
08 - ½ tsp salt
09 - ¼ tsp black pepper

# Instructions:

01 - Mix the Greek yogurt, garlic, chopped dill, lemon juice, olive oil, salt and black pepper together in a bowl. Set aside.
02 - Add the sliced cucumbers and onions to a large bowl. Pour the dressing over the top and toss until the salad is coated to your liking.
03 - Taste and adjust the salt and pepper if needed.
04 - Serve immediately and enjoy!

# Notes:

01 - Use a mandolin slicer for ¼ inch thick cucumber slices
02 - Can substitute sour cream for Greek yogurt
03 - Optional additions include crumbled feta and lemon zest
04 - Can use garlic powder instead of fresh garlic
