→ For the Dressing

08 - 1 batch Green Goddess Dressing (see recipe)

# Instructions:

01 - In a large bowl, combine all your chopped veggies and mix-ins - the finely chopped green cabbage, diced cucumber, sliced green onions, diced avocado, crumbled feta cheese, and pepitas. Give everything a gentle toss to distribute the ingredients evenly.
02 - Make a batch of Green Goddess Dressing according to the recipe. If you already have some prepared, just grab it from the fridge and give it a good stir before using.
03 - Pour the creamy Green Goddess Dressing over your salad mixture and toss until everything is well coated in that herby, tangy goodness. Serve right away, with chips or crackers on the side for scooping and dipping if you like!

# Notes:

01 - This salad keeps well in the refrigerator for 3-4 days in an airtight container, making it perfect for meal prep.
02 - For best results when meal prepping, store the dressing separately and add the avocado just before serving to keep everything fresh and prevent browning.
03 - Feel free to customize this salad by omitting the feta cheese for a dairy-free version or swapping the pepitas for chopped pistachios or almonds.
04 - This recipe makes a great main dish salad, but can also be served as a side dish for 8-10 people.
