Pizza Soup (Print Version)

# Ingredients:

→ Meats

01 - 1 pound mild Italian sausage
02 - 1 package (6 ounces) pepperoni, quartered, plus extra for garnish

→ Vegetables & Aromatics

03 - 1 large green bell pepper, seeded and diced (about 1 cup)
04 - 1 medium yellow onion, diced (about 1 cup)
05 - 1 tablespoon minced garlic

→ Liquids & Sauces

06 - 4 cups (32 ounces) chicken broth
07 - 1 can (28 ounces) crushed tomatoes
08 - 1 jar (14 ounces) pizza sauce

→ Seasonings & Garnishes

09 - 2 teaspoons Italian seasoning
10 - ¼ teaspoon crushed red pepper
11 - 1 cup (100g) finely shredded parmesan cheese, plus extra for garnish
12 - Fresh basil, for garnish

# Instructions:

01 - To a large pot or Dutch oven over medium heat, add Italian sausage, peppers, and onions. Cook, stirring occasionally, breaking up the meat as you go, until the meat is no longer pink (8-10 minutes). Add garlic and cook for 1 more minute. Drain excess grease.
02 - Slowly add chicken broth, scraping up the browned bits as you go.
03 - Add tomatoes, pizza sauce, pepperoni, Italian seasoning, and crushed red pepper. Bring the soup to a simmer (3-5 minutes), stirring occasionally. Add parmesan and stir until the cheese has melted.
04 - Garnish with basil, parmesan, and reserved pepperoni. Serve warm.
