Parmesan Zucchini and Corn (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 tablespoons olive oil
02 - 3 cloves garlic, minced
03 - 4 medium zucchini, diced
04 - 1 cup corn kernels (frozen, canned or roasted)

→ Seasonings

05 - 1/4 teaspoon dried basil
06 - 1/4 teaspoon dried oregano
07 - 1/4 teaspoon dried thyme
08 - Kosher salt and freshly ground black pepper, to taste

→ Finishing Ingredients

09 - 2 tablespoons freshly squeezed lime juice
10 - 2 tablespoons chopped fresh cilantro leaves
11 - 1/2 cup shaved Parmesan

# Instructions:

01 - Heat olive oil in a large cast iron skillet over medium-high heat. Add minced garlic and cook for about 1 minute until fragrant, stirring frequently.
02 - Add zucchini, corn, basil, oregano, and thyme to the skillet. Cook for 4-5 minutes, stirring occasionally, until zucchini is tender. Season with salt and pepper to taste.
03 - Stir in lime juice and fresh cilantro. Top with shaved Parmesan and serve immediately while hot.
